I will be the first to admit that there is something a little scary about yeast breads... there are so many variables, and so many things that can go wrong.... add to that starters or preferments and those can easily spook someone like me away, even though I bake so much...
In the next few weeks I’m going to take the plunge and try my hand at making crusty breads that use scary terms like starters, levains and biga. I hope you take this journey with me. I will show the processes, the successes and failures, and hopefully, sooner than later, baking a beautiful loaf of bread, whether it’s a no knead or one that takes time, planning and patience to achieve, will be less intimidating for both you and me. A friend told me today to jump into bread baking with the same fearlessness that I bake with... and that is what I plan to do! I hope you join me as I document the “Start” of this new yeast bread baking journey! (Pun intended—Sorry, I just had to 😂)
